If you are moving from a 12" cast-iron skillet to this Lodge Logic 15-Inch skillet you will be surprised with the added bulk and real-estate. If you are cooking for four or more adults, the added size will be deeply appreciated. The cooking characteristics are very controllable from hot to simmer making this massive skillet very friendly to work with. It responds to a standard household gas range top right on through a commercial gas range top in the same fashion. There is very little high residual heat to contend with as one might anticipate with such a large skillet. The bottom line is that if you are comfortable working with a smaller skillet, you will find this large skillet better at all tasks. The only shortcoming I can find with this skillet is the size and shape of the standard handle which I consider too small for a skillet this size and weight. There is no danger of it breaking, but it is useless for anything other and rotating or moving the skillet from point A to point B. And in moving, it is most beneficial to grip the other handle. This thing is aesome and has become my favorite skillet. Its extremely heavy and requires 2 hands to lift but heats evenly and my eggs glide around like teflon. Make sure to let your cast iron heat up completely before use. This is the biggest mistake made and not doing so will cause anything to stick. Also use wood or cilicone. Most people have the misconception that metal is good for cast iron. We users work to hard to achieve the best season skillet possible. No sense in scraping that off. Faith! That’s what I’m talking about here. So everyone and their brother were saying how Lodge was the best. and I decided to believe them. so I ordered up a 15 inch cast iron ( cue the words cast iron rhodinium where mr. spock is saying it) to see if it was all the jazz that everyone was barking on about. well, the first thing you see without seeing it is the sheen. Without sheen nothing is nothing. then you see the solidness of it. solidness counts a lot. then you pick it up and see it weighs 11.5 pounds and you’re pretty sure you’re onto something. then you let it stand next to your half-drunk roommate who splatters cooking oil on it. And then you wipe some extra virgin olive oil on it, just to be sure that it was not water your roommate sprinkled on it and then YOU LET IT RIP AND YOU TOSS IT INTO THE OVEN AT 425 DEGREES AND HURL A VEGETARIAN HEAVY BURGER INTO IT! and then you realize that that is not how you normally cook vegetarian burgers because you’ve had a few yourself, I mean what else is a Sunday with all the people and kids over for? so then you quickly look up can you broil using a Lodge cast iron and then answer comes back, the hierarchy approves! so you quickly turn the dial to broil and there is much rejoicing! and you watch as the hunk of vegetarian matter starts to broil without the cast iron melting in the ovens of Moltar. yep, faith, that’s what I’m talking about. it’s my first day with my Lodge 15 inch cast iron, but like a good horse, I think we are going to become lifelong friends. my vegetarian hunk of meat is almost done, so I will bid you a fond farewell in the faith that I will be eating my Lodge 15 inch cast iron cooked meal to perfection soon. A very high quality piece, but the cooking surface is far too textured for my taste. An hour later, After some elbow grease and a 1/2 electric drill and an assortment of pads and some very fine grit sand paper, I had the inside of the pan perfectly smooth, a re-season and I now have the pan I dreamed of. Lodge has taken the method of making the surface of the pans a bit rough so they hold onto the factory seasoning. Either way, a very high quality product that will last for generations if properly cared for.
